We're in the Asheville-Citizen Times!  Last night, a photographer from ACT came out and took pictures of the volunteers during work night.  We're featured in a gallery and were front page news today! Check it out:

We spent this morning in the garden. We planted beet greens in half of one of the beds. Beet seeds come in sets of three, so we were able to plant them about one inch apart from each other. Here's what the seeds look like:


Once they germinate, we'll thin the bed out.  Here are some beets that have not been thinned out yet:




That's me and Susan! Jessica and Susan thinned this bed out a few days ago and we had the beet greens for dinner.  They were delicious: really tender.  We've had such amazing food since I've been here.  Susan and Franklin have given me a break for the first week I'm here, but next week, I'll be put on the cooking schedule.  We each have to cook a few nights of the week.  I better start looking up some recipes!

Jessica, Susan, and I went to The Welcome Table today.  There were 91 people who came through to eat; it's the largest number of people they've had all year.  The Welcome Table is exactly what it sounds like: an open, inviting community meal.  It was a really lovely atmosphere: people coming together to eat together.  I don't know what it is about food, but it definitely brings people together!  I could feel it sitting at the table today, sharing food with total strangers.  Well, they won't be strangers to me any longer. I could see exactly where the food from our garden was going and who was able to benefit from it. That's a pretty cool feeling at the end of the day. And I only had the smallest part to play!  I can't wait til my first harvest of planted-from-seed crops comes out of the ground and onto the Welcome Table. I definitely have a lot to look forward to!
